Information about the cut
The Tri-Top, despite being a noble cut, is one of the tastiest. It is found under the bottom sirloin at the start of the hindquarter and is usually triangular in shape. It is suitable for roasts and especially stuffed pockets and can be evenly cut into medium-thick steaks. If cut against the grain, it can also be cooked quickly on the grill. It is a cut that lends itself to all types of marinating which makes the meat even more tender, given its quite long fibers.

Tips for preserving meat
