Information about the cut
The Cube roll or Scotch Fillet is the set of muscle fibers surrounding the neck of the steer. It is an imposing muscle group, very rich in fat and very tasty, which lends itself to a variety of preparations and cooking. When whole, it is perfect for braising, boiling, stewing, or smoking in the low & slow American Barbecue style. Thanks to these characteristics, it is the favorite cut for preparing the world-famous Pepper Stout Beef. If you prefer, however, it can be cut into steaks and grilled or cooked in the pan as an excellent alternative to sliced steak or boneless steaks
Information about the meat
Yoshi is Poddesu’s selection of finest young heifers, older heifers and cows, especially Masuria beef from the Plusky herd, and Bavarian Simmental. Yoshi meat is perfectly mature with good fat infiltration and an excellent combination of tenderness and juiciness. Yoshi is a selection made at our cattle farms with characteristics and standards that make it unmistakable. The good fat content (MBS 5-7) gives the meat pleasant sweet Yoshi notes
Tips for preserving meat
We recommend taking the meat out of the fridge at least 5-10 minutes before cooking to avoid thermal shock that could make the fibers tough
