Among the most famous American Barbecue preparations, especially in the southern states, are Beef Ribs. These are obtained from the central part of the first ribs of the animal, and may have 3, 4 or 5 ribs depending on origin and butchering method. It is a very marbled and tasty meat, but also rich in collagen, which literally turns into jelly when barbecued for many hours, giving the resulting dish an extraordinary succulence and tenderness.

With its vast pastures, colors and scents, Canada is among the best meat producers in the world. The main breed of cattle is the Black Angus. The cool climate encourages the growth of grasslands, and cattle are free to grow in wide, open environments. Canadian Angus from the Authentic Angus selection has a velvety, firm meat with thin filaments of fat that, when melted during cooking, give off an intense aroma and enhance its tenderness.
Tips for preserving meat
We recommend taking the meat out of the fridge at least 5-10 minutes before cooking to avoid thermal shock that could make the fibers tough
