Rump Cap is the typical cut for the Brazilian Churrasco barbecue which is triangular in shape with a thick layer of fat on one side. The Kimi selection rump cap mainly comes from selected cows with excellent marbling and layer of fat. Our Kimi rump cap is a selection with marked tenderness and distinctive flavor. The cut in question ranges from 1.4 to 1.9 kg and can be cooked whole either directly or indirectly. It can also be cooked directly on the spit in large slices folded in half
