Information about the cut
The Tomahawk steak, also known as the giant steak, is a cut from the front part of the beef loin. The main characteristic of the Tomahawk steal is its juicy and intense flavor blended with a persistent aroma, highly prized by meat lovers. The giant steak, shaped like a tomahawk (hence its name) has the meat attached to a large bone that releases a unique, intense flavor and makes quite a dramatic impact when brought to the table.
Information about the meat
Our Simmental is a selection from German cattle farms located in Bavaria. The young age of cattle which have not yet been in calf (i.e. heifers) gives a natural tenderness to the meat. The excellent level of connective tissue gives the meat flavor, fragrance and tenderness. Our Bavarian heifer is a refined, mature and soft meat with a 4-5 marbling score on the BMS scale
Tips for preserving meat
We recommend taking the meat out of the fridge at least 5-10 minutes before cooking to avoid thermal shock that could make the fibers tough
