Information about the cut
Flank Steak is a cut taken from the lower, rear part of the animal, in the belly area. Unlike the flank, it is just behind the forequarter, just after the Brisket. It has a beefy, intense, almost sweet, mineral flavor. It is a highly fibrous but very tender cut.
Information about the meat
Yoshi is Poddesu’s selection of finest young heifers, older heifers and cows, especially Masuria beef from the Plusky herd, and Bavarian Simmental. Yoshi meat is perfectly mature with good fat infiltration and an excellent combination of tenderness and juiciness. Yoshi is a selection made at our cattle farms with characteristics and standards that make it unmistakable. The good fat content (MBS 5-7) gives the meat pleasant sweet Yoshi notes
Tips for preserving meat
We recommend taking the meat out of the fridge at least 5-10 minutes before cooking to avoid thermal shock that could make the fibers tough
