Information about the cut
Rump Cap is the typical cut for the Brazilian Churrasco barbecue which is triangular in shape with a thick layer of fat on one side. The Yoshi Selection rump cap is obtained from heifers or selected cows which have good marbling and an excellent layer of fat. Our Yoshi rump cap is a selection that is exceptionally tender with a delicate flavor. The cut in question ranges from 1.4 to 1.9 kg and can be cooked whole indirectly or directly. It can also be cooked directly on the spit in large slices folded in half
Information about the meat
Yoshi is Poddesu’s selection of finest young heifers, older heifers and cows, especially Masuria beef from the Plusky herd, and Bavarian Simmental. Yoshi meat is perfectly mature with good fat infiltration and an excellent combination of tenderness and juiciness. Yoshi is a selection made at our cattle farms with characteristics and standards that make it unmistakable. The good fat content (MBS 5-7) gives the meat pleasant sweet Yoshi notes
Tips for preserving meat
We recommend taking the meat out of the fridge at least 5-10 minutes before cooking to avoid thermal shock that could make the fibers tough
