Information about the cut
ASADO DE TIRA (SHORT RIBS) IS A TYPICAL ARGENTINE DISH, IT CONSISTS OF BEEF RIBS CUT AT RIGHT ANGLES TO THE BONE, WHICH ARE VERY TENDER AND SUCCULENT. These are beef ribs that instead of being cut lengthwise, as is done with “rostinciana” (pork ribs) for example, are cut at right angles to the bone to form strips of meat that should be seared quickly over a hot grill. “Asado de tira” literally means this strip of roast meat.
Information about the meat
Yoshi is Poddesu’s selection of finest young heifers, older heifers and cows, especially Masuria beef from the Plusky herd, and Bavarian Simmental. Yoshi meat is perfectly mature with good fat infiltration and an excellent combination of tenderness and juiciness. Yoshi is a selection made at our cattle farms with characteristics and standards that make it unmistakable. The good fat content (MBS 5-7) gives the meat pleasant sweet Yoshi notes
Tips for preserving meat
We recommend taking the meat out of the fridge at least 5-10 minutes before cooking to avoid thermal shock that could make the fibers tough
